Healthy Date Cupcake

These healthy cupcakes require no sugar and yet taste delicious, all due to dates being our main ingredient. Dates have their own natural caramel like sugars and when you add in their fibre and antioxidants, you can enjoy these cupcakes guilt free! As well as our take, there’s numerous adjustments that you can make to this recipe to personalise these healthy cupcakes to your own taste. We’ve chosen chopped walnuts to give the cupcakes a little more crunch. For a step by step video, have a look at our YouTube link at the end.

Ingredients

1 Cup Dates. These will need to be chopped and soaked for 30mins in warm water.

½ Cup Self Raising flour

½ Cup Wholemeal Flour (or regular)

1 tsp Baking Powder

½ tsp Baking Soda

½ Cup Vegetable Oil

2 Eggs

Walnuts (optional)

Vanilla Essence (optional)

Recipe for Cupcakes

  1. Preheat your oven to Gas Mark 6 / 200c.

2. Soak dates in warm water for 30mins.

3. Beat eggs together and add oil.

4. Chop dates into small pieces. Add the chopped dates with the warm water into a grinder to grind into a paste.

Remember to keep the water the dates were soaked in when placing into blender.
How the date paste should look by the time you’ve finished blending – approx. 60 seconds.

5. Mix wholemeal flour and add the date paste into the egg/oil mixture.

6. Sieve the self raising flour, baking powder and baking soda into step 5.

7. Add chopped walnuts and vanilla essence (optional).

8. Mix thoroughly all together.

Your mixture after 2-3mins of stirring well should look similar to this. The texture should be so that it sticks to the spatula but should be easy to fall off when pushed away.

9. Place small servings into cupcake cases. Tap the baking tray with the cupcake cases to release any air bubbles

10. Place into the middle tray of the oven.

11. Bake for approximately 20 mins depending on oven. You can check with a toothpick to see if cooked throughout – the toothpick when placed inside the cupcake and taken out should be clear and have no mixture.

12. Remove cupcakes from tray and place on cooling rack for 5mins before serving.
